I'm trying to figure this out:

God says, "I am the one and only god there is no other."
(Have I got this right so far?)

He then creates man in His own image.
(So far, so good?)

He then tells him to "be fruitful and multiply."

Can anybody else see why we are in such a mess?

It's the logic behind these three statements that will guarantee trouble!

That depends on how you interpret them.
There is an ancient Egyptian word- "Netjer".
The Greeks mis-translated it as meaning "God".
There were something like 700 "Netjeru" in the Egyptian Pantheon, and the Greeks (and later the Romans) found that hilarious.
But "Netjer" doesn't mean "God".
It means something like "divine aspect".
700 "Netjeru" - 700 "divine aspects".
That means 700 different ways of looking at one and the same thing.
The Egyptian word for God was "UA"- the numeral for "ONE".
The 700 Netjeru were it's arms and legs, it's hands and feet-
and, more importantly, it's heart, it's intelligence, it's character...
All the components of which "UA" consisted.
Add to this a statement which is ascribed to Osiris (one of the chief Netjeru):

"All gods are immortal men, and all men are mortal gods".
